Ripe Mango Pudding

Golden ripe mango slices when cooked with brown sugar and ghee transforms into a delicate and flavorful fruit jam. When combined with brown sugar and coconut milk and leisurely simmered, it becomes a creamy Mango pudding.

1 cup of jaggery or dark brown sugar
1/4-cup water
1 cup of ripe mango jam (recipe below)
6 cups of fresh coconut milk
Or 4 cups of half and half mixed with 2 cups of heavy cream
Or 6 cups of canned coconut milk
Or 6 cups of coconut milk made from coconut milk powder
3 tablespoons of ghee
1 tablespoon thinly cut fresh coconut pieces
2 teaspoons of crushed cardamom


Mix the brown sugar and water in a heavy pan and cook over medium heat. When it starts to boil, add the jam and mix thoroughly till it is well blended. Now add the coconut milk/cream and cook over medium heat and simmer for 15 to 20 minutes. Keep stirring periodically. Heat ghee in a small skillet and fry the coconut pieces till they are golden brown. Pour over the cooking liquid and sprinkle crushed cardamom over it. Stir and keep it covered till it is time to serve. This desert tastes great hot or cold. It can be refrigerated up to four days.

Makes 4 to 6 servings

Manga Varattiyathu (Ripe mango jam)

12 cups of ripe mango segments without skin
6 cups of brown sugar or jaggery
2 cups of ghee

Cut mango segments into small pieces and place them in a heavy bottom pot. Pour just enough water to cover the fruit and cook over medium heat. Stir occasionally to make sure that it does not stick to the bottom of the pan. In about half an hour it would be well cooked. Mash cooked mango with a potato masher or a heavy spoon. Add the brown sugar and mix well. Cook while stirring continuously. Add ghee to the pot, a few tablespoons at a time. After about fifteen to twenty minutes the jam would be thick and smooth and would start leaving the sides as you stir. It will have a glazing with ghee. Remove from the stove and cool. This jam stays good for several days in a cool dark place and in a refrigerator for even longer time.
